Crunchy Granola

We like to serve with yogurt for breakfast!

Ingredients
4 cups rolled oats
2 teaspoons cinnamon
1 teaspoon salt
½ cup coconut oil, melted
½ cup honey or maple syrup
1 teaspoon vanilla extract
1 cup dried fruit
(raisins, cranberries, etc)
1 ½ cups nuts, optional
 
Instructions
Preheat oven to 350F. Line a large baking sheet with parchment paper.  Into a large bowl, combine oats, cinnamon and salt.  Set aside.  In a small bowl, whisk together the coconut oil, honey or maple syrup and vanilla extract.  Add the wet mixture to the dry ingredients and stir until all the oats are well coated.  Evenly spread out the oat mixture onto the lined baking sheet.  Bake for 10 minutes.  Take out the baking sheet and gently stir the oats.  Return to the oven to bake for another 10 minutes or until lightly browned.  Remove from the oven and sprinkle the dried fruit over the top .  Let cool and store in a sealed container.
