Zucchini Bread
A camp favorite we serve every morning!
Ingredients
3 cups flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 Tablespoon ground cinnamon
3 large eggs
1 cup olive oil
2 cups sugar
3 teaspoons vanilla extract
2 cups grated zucchini, unpeeled
Instructions
Preheat oven to 350F. Grease and flour two 8 x 4 inch loaf pans. In a medium bowl, sift flour, salt, baking powder, baking soda and cinnamon together. In a large bowl, add eggs, oil, vanilla and sugar together. Add sifted dry ingredients to the creamed mixture and beat well. Add grated zucchini and stir with a spoon until fully incorporated. Pour batter into the prepared pans. Bake for 40 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool in a pan on a rack for 20 minutes. Remove zucchini bread from the pan and cool completely on a wire rack.
